Subject: [PATCH] docs: hold the rb5000 standalone pin on v1.1

Recalbox 10.1.1 builds the standalone from tag v1.1 (rb5000.mk:7),
the revision source_commit already names. The libretro pin is the
HEAD of libretro-rb5000.
