fix: keep ctime out of the bit flip test

A real flip leaves the ctime alone. The test rewrites the file, and git sees the new ctime whenever the rewrite lands a second after the commit, so slow runs reported the flip as a working change. Reproduced with a 1.2 s delay before the flip.
